Regular Betty Crocker.....

Hey everyone! I have really been into the whole cooking thing lately! I think I am getting pretty good at it too. Anyway, I fixed some salsa and beef enchiladas for dinner. I found both of the recipes on http://www.mynashvillenest.blogspot.com/ I will post them here too though!

Here is the salsa before it was blended!
You will need:
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
¼ cups Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
¼ teaspoons Sugar
¼ teaspoons Salt
¼ teaspoons Ground Cumin
½ cups Cilantro
½ whole Lime Juice


Instructions:
Pour can of tomatoes into food processor or blender.
Then pour two cans of Rotel.
Now add 1/4 cup of diced onions.
and 1 clove of chopped garlic.
Chop the jalapeno by first slicing in half lengthwise, then cut those in half, now you have fourths. Then slice those into thin pieces and add to the tomatoes.
Now add, 1/4 tsp salt.
And 1/4 tsp sugar.
the juice of a lime. Use the juice of a whole lime if it's small and half of one if it is a big lime.
Add cilantro.
And 1/4 tsp ground cumin. Pulse until it is desired consistency.
This is what my finished product looked like! It was soo good but spicy so beware!
Beef Enchiladas

Here is before it was baked!
1 lb hamburger meat
1 small onion, chopped
1 can of chopped black olives (optional)- I didn't use them.
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas (I used 16 small tortillas

Instructions:
Brown the meat and saute the onions in with it.
Combine the mushroom soup and enchilada sauce
Once the beef is done, add in the olives (optional) and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together.
Fill tortillas with the meat mixture and roll up.
Pour sauce on top and top with cheese. Bake at 350 for 30-40 minutes.
The finished product! It was delicious and soo simple! The Hubby approved that I could make them again :)
And of course I had a little help in the kitchen!

Sweet baby girl Holli was right under my feet making sure to pick up the bits of food I accidently dropped!


I am so glad I came across http://www.mynashvillenest.blogspot.com/ I can't wait to try out some more of her recipes! If they are as great as this one I'm sure I will love it!
