Lately.......

1. I've been a little MIA this week! I have been sick and soo busy. Sorry for the long break!

2. Lee Dewyze wins American Idol! I actually wanted Crystal to win but I think Lee is great too!

Our Weekend :)

Our weekend was pretty good! I went to my cousin's wedding on Saturday and I am so excited for them. I unfortunatly didn't get any pictures because my camera was being used as a video camera ha! It was beautiful though and I hope they are very happy together. That night we went out to Bear's Den Pizza to listen to a friend play in a band. He is an incredible guitar player and it was nice to see him again. Unfortunatly, I started feeling bad so we headed home early.

Sunday was supposed to be church and family time but unfortunatly I am sick and didn't feel like going to church. I have laid around all day and feel terrible. Hopefully, I will be better tomorrow! All in all it was a good weekend even though I ended up sick and we didn't do a whole lot!

Stuffed Bell Pepper Cassorole

This was soo good and easy! I actually found the recipe on KitchenDaily.com but I changed quite a bit of it so I hope you like it!
Ingrediants:
1 lb. Ground Beef
1 small onion chopped
1 can diced tomatos
1 can corn- drained
2 1/2 cups of Stove Top Seasoned Herb stuffing mix
2 medium sized bell peppers
shredded cheese
1. Brown the hamburger meat and saute the onion in with it. Drain off the fat.

2. Mix in the tomatoes

3. Mix in the Corn
4. Mix in the 2 1/2 cups of stuffing.
5. Cut the peppers in half then half the halves. Remove the seeds from the peppers and arrange in a baking dish.
6. Spoon the meat mixture over the peppers.
7. Cover with foil and bake at 400 degrees for 30 minutes or until peppers are tender.
7. Remove from the oven and cover with cheese.
8. Place foil back on and bake for another five minutes or until cheese is melted.
9. The finished product!

Mother/Daughter Banquet 2010

Tonight our women's group at church had their yearly Mother/Daughter Banquet. I of course attended with my Mom. It's always a great time and the program is always entertaining. This year they held a "fashion show" talking about what we go through sometimes to achieve fashion, it was very cute! They also had a couple of readings and I sang "I Hope You Dance," love that song! We had potluck so there was all kinds of yummy food and desserts! It was a good time with lots of lovely ladies!

Our Weekend :)

We had a very busy weekend, although, I didn't take many pictures :( It was a great weekend though! Friday, Heath got off early so we went to eat at one of our favorite resturants, Fuji's. It's soo good and always entertaining. Saturday morning I went to my cousin Kali's high school graduation. I'm soo happy for her and I know she will enjoy college.
That afternoon I went to a crawfish boil with the Hubs. I don't like seafood at all but it was fun to meet new people and hang out with friends. Then I headed to Kali's graduation party and had a blast watching the little kids dance to the dj. They are soo cute! After the party, I headed back home because we had friends coming over. We had a blast seeing friends we haven't seen in a while! Sunday, I got up and went to church to teach my sunday school kiddos. Then we headed to a wedding shower for my cousin and soon to be cousin. It was a good time and everything looked so cute! That night I sat around for a little while then headed to walmart to buy groceries for the week, I'm trying to do better about buying ahead of time! Then I relaxed the rest of the night and went to bed early! It was a great weekend all in all. It doesn't look like my weekends will be slowing down anytime soon either!

Cooking with Me!


How to make this DELICIOUS baked ziti!
Ingrediants:
3 cups of ziti noodles
1 pound hamburger meat
1 jar spaghetti sauce
shredded mozzeralla cheese
Instructions:
Preheat oven to 375 degrees
Boil ziti noodles and drain water
While ziti is cooking brown hamburger meat and drain
Mix together meat, ziti, spaghetti sauce, mozzeralla cheese
Spoon into baking dish
Top with more mozzeralla cheese
Cover and bake 20 minutes
It's quick, easy, and soo good!

Heartbroken!


I am truly heartbroken by all the flood damage Nashville has recieved. I am more upset though that no one seems to be paying attention or doing anything to help. This image is of the Grand Ole Opry, a historic place for country music and a staple in Nashville. I'm truly upset that the media hasn't covered this as well as Haiti or New Orleans! There are people loosing everything they have and historic places being lost but it seems that no one is doing anything to help. I don't live in Nashville but I feel like it is my second home! I love this place and am truly upset by the history, lives, and homes being lost. I read a blog and feel free to go there the link is www.mcclintockb.blogspot.com she lives in Nashville and her pictures break my heart. I want to do my part in helping Nashville recover. I really want to go there and help them clean up but I am not sure I will be able to, I do live quite a ways away! Even then I feel like speaking of this on my blog will open some peoples eyes that may be able to do more than I can. By posting this I hope to make you aware of what is going on in OUR country. Maybe you didn't realize how bad it really is? Or maybe you just haven't heard about it? Either way I hope this opens your eyes, because it breaks my heart. Heavy Post

I am very saddened about the flooding in Nashville, TN. I don't feel as though some realize how bad the flooding really is. It's not just the fact that there are historic places being flooded and pricless things being lost, it's peoples homes and way of living as well. I want to help! I want to go there now and begin doing anything I can to help stop the water. Nashville holds a special place in my heart, not only as an aspiring country singer but it was also where my Hubby and I went on our honeymoon! Below I have posted some pictures of the flooding that break my heart. I pray for everyone being affected by this horrific flood!

Toad Suck Daze: Weekend Festivites

This weekend has been one WILD weekend!! I am still amazed at what all has happened! First off it stormed most of the weekend and we were dodging tornados and crazy rain. Our annual town Toad Suck Daze was held so of course we had to attend! I got some really cute things and I can't wait to put them out. I also got an incredible deal at Kohls! I spent $21 and saved $42!! I was soo excited! Anyway back to Toad Suck. Saturday night I performed in the Toad Suck Superstar contest. I didn't make the finals but that's ok it just wasn't meant to be. I'm still recording at my recording studio so it's not a huge deal. The Hubby and I had a Great time at Toad Suck and spending time together since he works all the time. We tried a new resturant this weekend that served Monogolian food and it was DELICIOUS!! I didn't think Monogolian food sounded that great but it was! We will definetly be going back. Anyway, below are a few pics of the festival so enjoy!
